{"id":114,"date":"2010-10-03T06:46:52","date_gmt":"2010-10-03T13:46:52","guid":{"rendered":"http:\/\/www.recipes.norathompson.com\/?p=114"},"modified":"2010-10-03T06:47:52","modified_gmt":"2010-10-03T13:47:52","slug":"moroccan-carrot-soup","status":"publish","type":"post","link":"https:\/\/www.recipes.norathompson.com\/?p=114","title":{"rendered":"Moroccan Carrot Soup"},"content":{"rendered":"<p>1 Tbsp. + 1 tsp. olive oil<br \/>\n1 tsp. fennel seeds<br \/>\n1 1\/4 lbs. carrot, sliced 1\/4 inch thick<br \/>\n1\/2 lb. sweet potatoes, peeled and cubed (1 large or 2 medium)<br \/>\n1 large Granny Smith apple, peeled and diced<br \/>\n6 cups cups low-sodium vegetable broth<br \/>\n2 Tbsp. long grain white rice<br \/>\n1\/4 tsp. curry powder<br \/>\n1\/4 tsp. coriander<br \/>\n1 bay leaf<br \/>\nFresh lemon juice<br \/>\nFlat-leaf parsley sprigs, for garnish<\/p>\n<p>In a large pot, heat olive oil over medium heat. Add fennel seeds and cook, stirring until fragrant, about 1-2\u00a0 minutes. Next, add sweet potatoes, carrots, and apple and cook, stirring often, 5 minutes. Add broth, rice, curry powder, coriander, and bay leaf.<\/p>\n<p>After all of the ingredients have been added, bring mixture to a very low boil. Cover, reduce heat and simmer until vegetables are just tender, about 20 minutes. Discard bay leaf and puree soup in batches in a food processor or with an immersion blender. Add lemon juice, salt, and freshly ground pepper to taste.
